Seaside Grill, nestled within Lighthouse Cove Resort, has evolved into a cherished local haunt for us over the years. One of its compelling aspects is the frequent menu updates, consistently surprising us with innovative culinary offerings.
Starting with our drinks, Doris savored a refreshing Moscow Mule while I opted for their renowned Lime in the Coconut cocktail – a house specialty that comes highly recommended. Both drinks were meticulously crafted, delivering an exquisite taste.
For appetizers, I must recommend the Fire Jerk Shrimp – succulent jumbo shrimp sautéed in a cast-iron skillet with a tantalizing blend of jerk marinade, spicy garlic, thyme, and butter, accompanied by garlic bread. Another standout is the Spicy Thai Calamari – delicately breaded calamari rings tossed in a sweet Thai chili sauce, garnished with green sprouts, cherry peppers, and sesame seeds, a creative departure from typical fried calamari offerings.
Moving to entrees, I relished the Baja Taco Salad – a flavorful mix of tortilla chips, mixed greens, Manchego cheese, roasted corn, pico de gallo, and in-house guacamole, drizzled with roasted garlic vinaigrette and spicy mayo. Despite its richness, it’s a refreshing delight after a day at the beach. Doris opted for the Shrimp Scampi, served over linguini and enhanced by an option to add steamed clams, resulting in a dish abundant with perfectly cooked shrimp and delectably prepared linguini.
Don’t miss the chance to visit the poolside tiki bar with its stunning ocean view, lively atmosphere, and delightful culinary offerings. As one of my go-to spots en route to LBTS and conveniently situated steps from the beach at the 14th Street Causeway, it’s the ideal spot to rejuvenate.
