Doris and I recently sat down with Michelle Mongelli of Roostica in Key West to learn what transformed a simple warehouse into the wildly successful culinary destination it is today. We were there in preparation for an upcoming segment on The Chef’s Table with Chef Dan. Our time spent at this Stock Island local favorite was truly eye-opening.
A Foundation Built on Fire
It is immediately clear that Roostica isn’t just another pizza joint; it is a labor of love defined by its equipment and technique. The heart of the kitchen features two impressive wood-burning dragons that maintain a consistent 900 degrees. This intense heat is the secret to their signature pies, providing a perfect, charred crust that is hard to replicate.
The Pies That Define the Experience
I asked Michelle what the most popular order was, and she didn’t hesitate: the Brooklyn Boy. This pie is a meat-lover’s dream, topped with sweet sausage, meatballs, spicy salami, bacon, onion, red pepper, and mozzarella. I had to see what the hype was all about, and I can tell you, this is one damn good pie. There is meat on every square inch, but it isn’t overly done. The pizzaiolo knew exactly when to pull it out of those dragons—enough to give me the well-done crust I requested without burning the toppings.
Doris opted for one of the specialty pies, which happens to be one of her favorites: the Mortadella Pizza, featuring fresh mozzarella, burrata, and toasted pistachios. We both agreed the pie was fabulous, but the addition of the toasted pistachios really knocked it out of the park. Most places chop up the nuts and sprinkle them over the top, but here, the pistachios are placed on the pie and toasted right in the oven. This creates an aromatic, freshly toasted flavor that brings the entire dish to the next level. Even our friend, Michael Guzzi of Key West Spice joined us and gave the meal his full seal of approval, he had the manicotti and said it was “fabulous”. The portion size was generous enough to have him exclaim, “ It was enough to feed a whole family”.

From the history embedded in the walls to the precision of the wood-fired technique, Roostica stands out as a true gem for anyone visiting the Keys. Whether you are a local or just passing through Stock Island, the dedication to quality here is unmistakable.
