While Pops operates as a food truck in Marathon and Key West, we discovered a vital distinction: these satellite units are supported by a primary brick-and-mortar kitchen on Big Pine Key. All meats are prepared at the main facility and transported to the units, ensuring a level of consistency and quality that earned it a historic “first.” This is the only food truck operation to ever be SoFloDining Approved.

The Meaty Kings — Pulled Pork & Ribs: These were my personal favorites. The ribs were exceptionally meaty and plump, featuring a flavor profile that reminded me of a high-quality Easter ham—moist, smoky, and packed with flavor all the way to the bone. The pulled pork followed suit, remaining perfectly tender with just the right amount of fat.
Doris’ Favorites — The Hearty Comforts: Doris was impressed by the half-chicken and the pulled pork. The chicken was easily the largest I have encountered in my 40 years in the industry. While its appearance initially made me worry it might be overdone, it proved to be juicy and delicious upon the first cut.
The Perfect Sides — Potato Salad & Baked Beans: This is a brilliant display of simplicity done right. Both the homemade potato salad and the baked beans provided a bright, house-made contrast to the richness of the smoked meats.
The “Attentive” Factor
While the food showcases a true pitmaster’s soul, the service and presentation solidify this as a destination. The truck itself is absolutely immaculate, and the staff manages the high volume of visitors with ease. In an era of rushed, roadside snacks, the quality here allows you to actually decompress and enjoy a meal that holds its own against any traditional smokehouse.
A true testament to the skill here is moisture retention. We found that the leftovers reheated in the microwave perfectly the next day without drying out—a rare feat in the world of barbecue.
