We were recently on our way home from a double taping of Who’s at the Chef’s Table with Chef Dan when we decided to stop in downtown Hollywood. We weren’t sure what we wanted to eat, so we walked up and down, checked out what everybody had, and decided to stop into a true local legend: Helen Huang’s Mandarin House. Steering clear of stripped-down takeout trends, this dining room remains dedicated to classic Cantonese and Mandarin traditions, emphasizing disciplined wok technique, scratch marinades, and fresh ingredient preparation.
The meal begins with a timeless classic: the traditional Pu Pu Platter. Ideal for sharing, this presentation features a generous sampling of house appetizers, including crisp chicken wings, delicate Shanghai spring rolls, glazed barbecued ribs, crisp imperial shrimp, and skewered satay beef. Each element demonstrates clean frying precision and balanced marinades, avoiding the heavy greasiness common in lesser preparations.
The wok-fired entrées highlight classic regional balance, heat control, and knife work. The Roast Pork with Vegetables showcases tender, slow-roasted char siu pork sliced thin and flash-tossed in a hot wok alongside crisp, colorful mixed Chinese vegetables. The vegetables retain their fresh crunch and vibrant color, bound by a light, savory reduction that enhances the smoky sweetness of the pork. For diners with specific dietary preferences, the kitchen thoughtfully accommodates requests to omit cornstarch or MSG without sacrificing depth of flavor.
A reliable staple that proves the kitchen’s mastery of fundamentals is their Roast Pork Fried Rice. Individual grains of chilled steamed rice are stir-fried at high heat with diced savory roast pork, sweet onions, fresh bean sprouts, carrots, green peas, scrambled egg, and aged soy sauce. The result delivers the crucial, elusive wok hei (breath of the wok), achieving a dry, aromatic finish where each component remains distinct. Helen Huang’s Mandarin House remains a premier destination for elevated, classic Chinese dining.
