The Starters We began our visit with the Avocado Brochette, and it was a revelation. The combination of ingredients creates a sophisticated balance of flavors that is truly unmatched. The bread is so exceptional that I had to inquire about its source; unsurprisingly, they bake it fresh in-house daily. It is a testament to their commitment to quality that they keep this recipe for themselves—it’s not for sale!

The Main Event For our main course, we selected the Red Meat Lovers Pizza. It is immediately clear that the kitchen team is serious about their craft. They have perfected the technique of adding the pepperoni and prosciutto at the very end of the cooking process, ensuring the meats maintain their integrity, texture, and flavor without breaking down.

It is important to note why this is so special: while standard pizza dough uses wheat flour, water, and plenty of salt, their Pinsa dough incorporates a blend of wheat, soy, and rice flours. By using a higher water content and less salt, and proofing the dough for 72 hours, they create a crust that is lighter, airier, and significantly easier to digest than traditional pizza. It is a lower-fat, lower-sodium alternative that renders standard pizza obsolete once you’ve experienced the difference.
