A recent evening spent with our friends Olena and Louis, who graciously invited and treated us to this exceptional meal, allowed us to explore a menu that radiates a dedication to traditional technique, and high-quality ingredients.

From the moment we arrived, the atmosphere signaled a polished dining experience. The kitchen operates at a level of excellence that suggests a deep respect for the craft, delivering dishes that are as soul-warming as they are refined.

Our exploration began with two standout appetizers that showcased the kitchen’s range:

  • Caprino Fritto: This was, quite simply, a revelation. The goat cheese is breaded and deep-fried to perfection, served alongside a homemade honey truffle fig jam. It is easily one of the top five appetizers I have ever encountered—a dish I could enjoy every single day.
  • Fresca: To balance the richness of the cheese, this salad offered a bright, refreshing profile. Arugula, grape tomatoes, pears, and shaved asiago were tossed with caramelized walnuts in EVOO and fresh lemon juice, providing an excellent, light accompaniment to the meal.

We then moved to the heartier entrées, sharing our selections to fully appreciate the kitchen’s seasoning and technique:

  • Genovese Partenopea: This bavette pasta was a highlight of the evening. Tossed in a deeply flavorful caramelized onion stew with shredded beef and pecorino cheese, it was brilliantly put together—a true celebration of flavor in every bite.
  • Pappardelle Pesto & Funghi: The freshness of the ingredients shone through in this dish. Delicate wide pasta ribbons were bathed in a rich, creamy pesto sauce, beautifully complemented by the earthy notes of imported wild mushrooms.
  • Ravioli Del Giorno: These pasta pockets, stuffed with pear and fontina cheese in a light cream sauce, were the standout of the evening. Delicate and balanced, this dish is a must-order that solidified my admiration for the kitchen’s expertise.
  • Pasta Nella Forma: The experience was rounded out by this tableside classic. Watching the pasta being tossed in an aged cheese wheel—offered in alfredo or cacio e pepe styles—is a performance that never gets old and only serves to heighten the anticipation.
